Ingredients

  • 1 cup shredded unsweetened coconut
  • 1/2 cup natural nut butter (almond or peanut butter)
  • 2 tablespoons honey or maple syrup

Instructions

  1. In a large mixing bowl, combine the shredded coconut, nut butter, and honey or maple syrup.
  2. Mix everything until well combined and a sticky dough forms.
  3. Place the mixture in the fridge for about 10-15 minutes to firm up slightly.
  4. Scoop out a tablespoon of the mixture and roll it into a ball.
  5. Continue rolling until all the mixture has been turned into balls.
  6. If desired, roll the balls in extra shredded coconut or chopped nuts.
  7. Place them back in the fridge for another 30 minutes to set.

Notes

Store the balls in an airtight container in the refrigerator for up to a week. They can also be frozen for up to 2 months.
