Ingredients

Scale
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 large egg at room temperature

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine the sugar, peanut butter, and egg in a medium mixing bowl. Stir until smooth and well combined.
  3. Scoop about 1 tablespoon of dough and roll it into a ball.
  4. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  5. Use a fork to gently press down on each ball, creating a crisscross pattern on the top.
  6. Bake in the preheated oven for 10 minutes, or until the edges are set and the tops look slightly cracked.
  7. Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes.
  8. Transfer the cookies to a wire rack to cool completely. Serve and enjoy.

Notes

For even cookies, chill scooped dough briefly for 10 minutes if your kitchen is warm. Store cooled cookies in an airtight container at room temperature for up to 4 days.
