Ingredients

  • 2 cups shredded coconut
  • 1 can sweetened condensed milk (14 oz)
  • 1 tsp vanilla extract
  • 1 ½ cups almond flour

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the shredded coconut, sweetened condensed milk, vanilla extract, and almond flour. Stir until well-mixed.
  3. Using a cookie scoop or spoon, drop heaping teaspoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  4. Gently press down on each mound to flatten slightly.
  5. Bake for 15–18 minutes, or until the edges are golden.
