Ingredients

Scale
  • 2 cups rolled oats (gluten-free if needed)
  • 1 cup unsweetened applesauce
  • 1 teaspoon cinnamon
  • 1 cup chopped apples (fresh or canned)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, applesauce, cinnamon, and chopped apples. Mix until everything is well incorporated.
  3. Scoop the mixture onto the prepared baking sheet, using about 2 tablespoons for each cookie. Flatten slightly as they won’t spread much during baking.
  4. Bake for 15-20 minutes, or until the cookies are golden and firm to the touch.
  5. Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Feel free to customize with nuts or additional spices, and store in an airtight container for up to a week.
