2 cups rolled oats (gluten-free if needed)
1 cup unsweetened applesauce
1 teaspoon cinnamon
1 cup chopped apples (fresh or canned)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the rolled oats, applesauce, cinnamon, and chopped apples. Mix until everything is well incorporated.
Scoop the mixture onto the prepared baking sheet, using about 2 tablespoons for each cookie. Flatten slightly as they won’t spread much during baking.
Bake for 15-20 minutes, or until the cookies are golden and firm to the touch.
Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.
