Ingredients

  • 1 cup natural peanut butter
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup dark chocolate chips (optional)

Instructions

  1. Line an 8×8 inch baking dish with parchment paper, leaving overhang for easy removal.
  2. In a bowl, stir the peanut butter and honey (or maple syrup) together until well combined.
  3. Gradually add the rolled oats, stirring until fully incorporated.
  4. If using, gently fold in the dark chocolate chips.
  5. Transfer the mixture to the prepared baking dish and press down firmly and evenly.
  6. Refrigerate for at least 1-2 hours until set.
  7. Once set, lift the bars out with the parchment overhang, slice into squares, and enjoy!

Notes

Store bars in an airtight container in the fridge for up to one week. They can also be frozen for up to three months.
