Gluten-Free Maple Leaf Sugar Cookies

Gluten-Free Maple Leaf Sugar Cookies — marbled leaf cookies

These gluten-free maple leaf sugar cookies get their autumn look from leaf cutters and three shades of dough. The flavors come from ginger, cinnamon and cocoa; there is no maple syrup in this recipe. Keeping that distinction clear helps you choose the right ingredients and gives the caption an accurate flavor promise.

Color each portion before marbling

Start with one base dough, divide it evenly and add one flavor to each portion. Mix each color fully before bringing the three together. Once the patchwork is assembled, use only a few folds. Too much kneading at that stage changes distinct ribbons into a single brown dough.

Thickness controls the finish

A dough thickness of 6–8 mm supports the leaf tips while keeping the center tender. Use only enough extra flour to prevent sticking. Cut cookies of similar size for each tray so that small leaves do not overbake while larger ones are still pale. Score the veins lightly rather than cutting through.

Make the scraps work for you

Press leftover pieces together with their marbled faces visible, then roll again without a long knead. The second set of leaves will have a different pattern, which is part of the design. Cool the baked cookies before stacking them so the thin points have time to become firm.

Gluten-free ingredient checks

Weigh the flour and use a plain gluten-free blend rather than swapping in a single nut or coconut flour. Omit the listed xanthan only where the ingredient line says to do so. Check the labels on baking powder, chocolate, spices and other packaged ingredients, and use clean tools and surfaces to avoid cross-contact.

For label guidance, read the FDA explanation of gluten-free food labeling. Contains: Egg and milk; check the flour blend.

Serving and storage

Keep completely cooled cookies in an airtight container in a cool, dry place for up to 1 week.

Gluten-Free Maple Leaf Sugar Cookies

These gluten-free maple leaf sugar cookies get their autumn look from leaf cutters and three shades of dough.
Prep Time 30 minutes
Cook Time 14 minutes
Servings: 24 cookies

Ingredients

Cookie dough
  • 360 g plain gluten-free flour blend plus extra for rolling
  • 200 g granulated sugar
  • 3/4 tsp xanthan gum; omit if already in the blend
  • 1/2 tsp salt
  • 180 g unsalted butter softened
  • 1 large egg room temperature
  • 2 tsp vanilla extract
Three colors
  • 2 tsp ground ginger
  • 3 tsp ground cinnamon
  • 4 tsp Dutch-process cocoa powder

Method

  1. Heat a conventional oven to 350°F / 180°C and line two baking trays. Stir together flour, sugar, xanthan and salt. Work in the softened butter until sandy, then add the egg and vanilla and mix into a smooth, nonsticky dough.
  2. Divide the dough into three equal portions. Knead ginger into one, cinnamon into the second and cocoa into the third, so each portion has an even color.
  3. Arrange small pieces of all three doughs in a patchwork rectangle. Roll lightly to join, fold into thirds and repeat only enough to create visible marbling. Stop before the colors blend together.
  4. Roll on a lightly floured surface to 1/4–1/3 inch / 6–8 mm thick. Cut with approximately 3 1/2-inch leaf cutters. Arrange an inch apart. Gather scraps without kneading heavily, and reroll. Lightly score veins with a blunt knife or toothpick.
  5. Bake 10–14 minutes: the shorter end gives a softer center; the longer end makes a crisper cookie. Look for lightly golden edges. Cool on the tray for 10 minutes, then finish cooling on a rack.
