These gluten-free cinnamon roll cookies combine cinnamon-swirled cookie dough with a smooth vanilla cream cheese centre. Follow the ingredient weights and visual cues below, then use the recipe card for the full method.
What makes these cookies different
These gluten-free cinnamon roll cookies bring together three distinct textures: buttery vanilla dough, dark cinnamon ribbons and a smooth cream cheese centre. The spiral on top gives each cookie its cinnamon-roll look without a yeast dough, proofing time or a rolled sheet of pastry.
Although the ingredient list has several parts, the cinnamon paste does double duty. Half is swirled through the dough, while the other half is warmed just enough to pipe over the filling. Separating those portions at the beginning keeps assembly straightforward.
Choose the right dough texture
Use softened butter for the cookie dough rather than melted butter. Creaming it with the sugar gives a dough that can be scooped and shaped without a refrigerator rest. Melted butter changes that starting consistency and can encourage excessive spreading.
Weigh the gluten-free flour instead of packing a measuring cup. This recipe needs a plain flour blend rather than almond or coconut flour. Add the stated xanthan gum only when the blend does not already contain it; different blends can still absorb moisture differently.
Keep the cinnamon marbling visible
Cool the portion of cinnamon filling intended for the dough until it is spreadable. A very runny paste blends in too readily and makes the dough harder to handle. Build alternating layers of dough and paste, then fold only two or three times.
The aim is a pattern of dark ribbons rather than uniformly brown dough. A small offset spatula or the end of a knife gives more control than vigorous stirring. Keep the reserved piping portion separate so it stays available for the finishing spiral.
Shape and fill before baking
A two-tablespoon scoop keeps the fourteen portions reasonably consistent. Roll each ball in cinnamon sugar before pressing a central well with a tablespoon measure. Leave enough dough underneath the well to support the filling.
Mix the cream cheese filling until smooth without adding unnecessary air. Warm cream helps loosen it to a spoonable texture. Fill the wells first, then pipe the cinnamon spiral directly on the exposed cream cheese; the filling and topping bake with the cookie.
Baking cues and cooling
Bake at 350°F / 180°C in a conventional oven, checking at ten minutes. Look for a slight puff and a set cream cheese centre rather than waiting for dark cookie edges. The card allows up to twelve minutes per tray.
Freshly baked cookies are fragile. Leave them on the tray until completely cool before transferring them to a container. If the shape needs correcting, gently nudge the warm edges with a larger round cutter without pressing down on the filling.
Can I turn these into regular cinnamon rolls?
This dough is formulated as a cookie and contains no yeast. It should be scooped into individual wells, not kneaded or rolled into a bread spiral. For another pumpkin-and-cream-cheese dessert, try our gluten-free pumpkin roll.
Storage and serving
Keep the cooled cookies in an airtight container in the refrigerator for three to four days. Arrange them in a single layer where possible so the cinnamon spiral stays tidy. They contain both eggs and dairy, so gluten-free does not mean suitable for every dietary requirement.

Gluten-Free Cinnamon Roll Cookies
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C. Line two large baking trays.
- Mix the dark brown sugar, 1 tbsp cinnamon and cornstarch. Stir in melted butter. Divide in half. Let one half cool to a spreadable paste for marbling; reserve the other half for piping.
- Cream the softened butter, 75 g sugar and vanilla until pale. Mix in the yolks. Combine the flour, baking powder, xanthan gum and salt separately, then mix into the wet ingredients to form a scoopable dough.
- Spread one-third of the dough in a bowl. Swirl in one-third of the marbling paste. Cover with flattened pieces of the next third of dough, then repeat with more paste. Finish with the remaining dough and paste. Fold just 2–3 times to keep visible cinnamon streaks.
- Mix cream cheese and 25 g sugar until smooth. Stir in the warm cream and vanilla. The filling should be loose enough to spoon; add 1–2 tsp extra cream only if needed.
- Combine the coating sugar and cinnamon. Shape 2-tbsp portions of dough into 14 balls, coat in cinnamon sugar and place at least 2 inches / 5 cm apart. Press a well in each with a 1-tbsp measuring spoon.
- Fill each well with about 2–3 tsp cream cheese filling. Gently warm the reserved cinnamon filling until pipeable and pipe a spiral on top.
- Bake one tray at a time for 10–12 minutes, until slightly puffed and the cream cheese filling has set. Keep the waiting tray at room temperature.
- Cool completely on the baking trays before moving.
Notes
Weigh the flour. Choose a plain blend; flour brands absorb differently. Check ingredient labels and prevent cross-contact. Contains eggs and milk. Prep and cook fields are estimates; bake each tray for 10–12 minutes and allow additional time for complete cooling.
