These gluten-free orange shortbread sticks pair fresh citrus flavour with a dark chocolate-dipped finish. Follow the ingredient weights and visual cues below, then use the recipe card for the full method.
A crisp cookie with a chocolate finish
Gluten-free orange shortbread combines fresh citrus zest, a buttery dough and a dark chocolate coating. Cutting the dough into slender sticks creates a useful dipping shape and gives plenty of edges for a light, crisp finish.
The recipe is egg-free as written, but it contains butter and may contain milk through the chocolate. It makes about thirty-six sticks, with the exact count depending on trimming and how evenly the dough is cut.
Release the orange flavour first
Rub the orange zest into the sugar with your fingertips before adding butter. This distributes the zest and its fragrant oils throughout the dough. Take only the coloured outer layer of peel rather than grating deeply into the white pith.
Orange juice is added after the flour mixture. Before that addition, the bowl will look dry and crumbly. That intermediate texture is expected; do not add extra butter simply because the first mixture has not yet come together.
Why the butter is not whipped
Mix the softened butter with the orange sugar and vanilla just until combined. Shortbread does not need the volume that a creamed sponge cake requires. Too much incorporated air can work against straight, well-defined sticks.
There are no raising agents in this dough. Cornstarch contributes to its fine texture, and the gluten-free blend provides the main flour structure. Use the stated gum only if the blend does not already contain xanthan gum.
Roll evenly and cut straight
Rolling between parchment sheets avoids dusting the worktop with extra flour. Aim for a thickness of about one centimetre, then trim the rectangle to twelve centimetres wide. Cut across it into sticks about one centimetre wide.
A small offset spatula helps transfer the pieces without bending. If the dough feels too soft to move cleanly, chill it on the parchment for fifteen to thirty minutes. Keep each stick a similar size so one tray bakes evenly.
Bake pale golden rather than dark brown
Bake at 350°F / 180°C for fifteen to eighteen minutes. Look for a light golden colour across the surface with slightly darker ends. Deep brown edges can overwhelm the orange flavour and change the delicate texture.
Let the sticks settle on the tray for ten minutes, then cool fully on a rack. Dipping warm cookies can make the chocolate coating harder to control, so finish the cooling stage before preparing the dipping setup.
How to get a tidy chocolate dip
A narrow glass gives a deep pool of chocolate without needing a large batch. Dip roughly half of each cooled stick, lift it out and let excess chocolate drip back before laying it on parchment.
Use coconut oil only when the melted chocolate needs thinning. A thin coating suits the slender cookie better than a thick shell. A few fine zigzags on the chocolate end provide decoration without adding another flavour.
Storage and more baking ideas
Keep the finished sticks in an airtight container in a cool, dry place for one to two weeks. Let the chocolate set before stacking, and separate layers with parchment if needed.

Gluten-Free Orange Shortbread Cookie Sticks
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C and line a baking tray.
- Rub the orange zest into the sugar. Stir in the butter and vanilla just until combined; do not whip or aerate.
- Sift in the flour, cornstarch, xanthan gum and salt. Mix to a dry, crumbly texture. Add the orange juice, then knead until the dough is smooth and holds together.
- Roll between two sheets of parchment to about 1 cm thick. Trim to a rectangle 12 cm wide, then cut into sticks roughly 12 × 1 × 1 cm. Re-roll the scraps.
- Transfer carefully to the lined tray, keeping the sticks straight. If needed, chill them on their parchment for 15–30 minutes to make handling easier.
- Bake for 15–18 minutes, until light golden with slightly darker ends. Cool on the tray for 10 minutes, then transfer to a rack and cool completely.
- Put the melted chocolate in a narrow glass. Add coconut oil only if it needs thinning. Dip about half of each stick, let excess chocolate drip away and place on parchment.
- Decorate the chocolate ends with thin chocolate zigzags if desired. Let the coating set before serving.
