Two lemon components in one cookie

These gluten-free lemon curd cookies have citrus in both the dough and the filling. Powdered sugar coats the outside before baking, creating pale crinkles around a yellow curd centre. The curd is spooned into the raw dough, so the filling bakes with the cookie.

Plan ahead for the chilling stage. The freshly mixed dough is closer to a thick batter than a firm cookie dough, and it needs at least two hours in the refrigerator before shaping. Adding more flour to make it firm immediately changes the formulation.

Prepare the curd gently

Rub lemon zest into the curd sugar, then mix in the yolks and salt. Slowly adding hot lemon juice tempers the yolks before the mixture returns to gentle heat. Stir continuously until it thickly coats the spatula.

Use a nonreactive pan and silicone or wooden tools. Keep the curd below a boil, stir in the butter off the heat and strain if you prefer a completely smooth filling. Cover directly against the surface while cooling to discourage a skin.

Chilling makes the dough manageable

Mix the lemon-sugar with warm melted butter, eggs, juice and vanilla before adding the gluten-free dry ingredients. The mixture will look soft and sticky at this point. Cover it and refrigerate for at least two hours or overnight.

A digital scale is useful for the flour. A tightly packed cup can add more than intended, and a dry dough will behave differently when it spreads. Use a plain gluten-free blend; almond flour and coconut flour are not direct substitutes.

Use powdered sugar as the handling layer

Drop a two-tablespoon portion of chilled dough directly into powdered sugar. Coat it before rolling between your palms so the surface is easier to handle. Place eight portions on a tray with generous space around them.

Press the centre only halfway down with a half-tablespoon measure. A hole that goes all the way through will not support the filling. Add a generous teaspoon of cooled curd to each well, keeping the surface of the dough intact underneath.

Watch the curd as well as the edges

Bake one tray at a time at 350°F / 180°C for nine to twelve minutes. The edges should spread and crack, while the curd becomes slightly puffed. Avoid waiting for the lemon centre to visibly bubble.

Keep the second tray refrigerated while the first bakes. Let each finished tray stand for five to ten minutes before moving the cookies to a rack. The cookies are delicate immediately after baking and firm up as they cool.

Can these be made ahead?

You can prepare the curd a day or two before making the cookies and keep it refrigerated. The dough can also chill overnight. This separates the active preparation into shorter sessions without skipping the required chilling stage.

For a contrasting spiced dessert, our gluten-free pumpkin roll pairs pumpkin sponge with a whipped cream cheese filling instead of a fruit curd.

Keep the filling protected

Store the cookies airtight for two to three days at room temperature or up to about one week refrigerated. Keep any leftover curd separately in a covered refrigerator container for up to about ten days.

The recipe contains eggs and dairy. Gluten-free ingredient checks still matter for the flour blend, baking powder, vanilla and powdered sugar; use clean tools and avoid contact with wheat-flour preparation.

Prep Time 1 hour
Cook Time 25 minutes
Chill Time 2 hours
Total Time 3 hours 25 minutes
Servings: 16 cookies

Ingredients

Lemon curd
  • 100 g granulated sugar
  • Finely grated zest of 1 lemon
  • 3 large egg yolks room temperature
  • 1/4 tsp salt
  • 60 g fresh lemon juice
  • 55 g unsalted butter cubed
Lemon cookie dough
  • 150 g granulated sugar
  • Finely grated zest of 2 lemons
  • 115 g unsalted butter melted and cooled until warm
  • 2 large eggs room temperature
  • 30 g fresh lemon juice
  • 1 tsp vanilla extract
  • 240 g plain gluten-free flour blend
  • 1/2 tsp xanthan gum; omit if the blend contains it
  • 1/2 tsp gluten-free baking powder
  • 1/4 tsp salt
  • 90 g powdered sugar for coating

Method

  1. For the curd, rub the zest into 100 g sugar. Mix in the yolks and salt until slightly pale. Use a nonreactive bowl and silicone or wooden utensils.
  2. Heat 60 g lemon juice just to boiling. Slowly stir it into the yolk mixture, then return everything to a nonreactive saucepan.
  3. Stir constantly over low heat for about 4–5 minutes, until the mixture thickly coats a spatula. Do not let it boil. Remove from the heat, stir in the butter and strain if desired.
  4. Cover the curd directly on its surface and cool completely.
  5. For the dough, rub the remaining zest into 150 g sugar. Whisk in melted butter, eggs, 30 g lemon juice and vanilla. Mix in the flour, xanthan gum, baking powder and salt. The dough will be very soft; do not add extra flour.
  6. Refrigerate for at least 2 hours or overnight.
  7. Heat a conventional oven to 350°F / 180°C. Line two baking trays. Scoop 2-tbsp portions of dough into powdered sugar and coat well before rolling into balls.
  8. Arrange with plenty of space, about 8 per tray. Press a well halfway into each ball with a 1/2-tbsp measuring spoon. Add a generous teaspoon of cooled curd.
  9. Bake one tray at a time for 9–12 minutes, until the edges have spread and cracked and the curd is slightly puffed but not bubbling. Keep the waiting tray refrigerated.
  10. Cool on the tray for 5–10 minutes, then move to a rack.

Notes

Keep airtight for 2–3 days at room temperature or up to about 1 week refrigerated. Refrigerate leftover curd separately for up to about 10 days.
