These gluten-free blueberry cheesecake cookies have blueberry jam ribbons, baked cheesecake centres and a glossy fruit topping. Follow the ingredient weights and visual cues below, then use the recipe card for the full method.
Blueberry flavour in two different places
These gluten-free blueberry cheesecake cookies use blueberry jam in the dough and a separate blueberry sauce on top. The pale cheesecake well sits between those two fruit elements. Keeping them separate creates a marbled cookie instead of a uniformly purple dough.
Prepare the components in a practical order: dough and filling first, shaping and baking next, then sauce while the cookies cool. The topping is spooned onto cooled cookies shortly before serving rather than baked over the cream cheese.
Start with lemon-scented cookie dough
Rub the lemon zest into the sugar before creaming it with softened butter and vanilla. This distributes the zest throughout the dough. Add the egg yolks, then the combined flour, baking powder, xanthan gum and salt.
The finished dough should be scoopable. Use a plain gluten-free flour blend and weigh it carefully, since blends can absorb different amounts of moisture. Omit the extra xanthan gum when the blend already supplies it.
Make purple ribbons without overmixing
Spread one-third of the dough in a bowl, swirl in one-third of the jam, then cover with flattened pieces of the next dough portion. Repeat until the dough and jam are layered. Finish with only two or three gentle folds.
The small number of folds matters: you want visible purple streaks and pale dough in the same cookie. Fully beating in the jam removes that pattern and makes shaping less tidy. A silicone spatula gives better control than a mixer for this stage.
Shape wells for the cheesecake filling
A sugar coating makes the jam-swirled dough easier to handle. Coat two-tablespoon portions, roll into balls and press a central well with a tablespoon measure. Minor cracks around the edge can occur where the jam runs through the dough.
Mix room-temperature cream cheese and sugar before adding warm cream and vanilla. The result should be smooth enough to spoon. Divide the filling among the fourteen wells and leave at least two inches between cookies on the tray.
Use the detailed baking cues
Bake one tray at a time at 350°F / 180°C, starting the check at ten minutes. The cookies should spread slightly and the cheesecake centre should set, generally within ten to twelve minutes.
Leave them on their trays until completely cool. Moving them while soft can cause breaks, particularly around the filled centre. Keep the waiting raw tray at room temperature while the first tray bakes.
Cook the sauce and cool it separately
Heat blueberries with sugar and lemon juice until the fruit releases its juice. Stir the cornstarch slurry in off the heat, then return to the stove and stir until the juices thicken. The berries should retain some shape rather than becoming a completely smooth puree.
Cool the sauce to room temperature before topping. Warm sauce on a delicate cookie can soften the surface and make the cream cheese centre harder to present neatly. Spoon it on just before serving.
Storage and related recipes
Refrigerate the cookies airtight for up to three days, keeping the sauce separate until needed where possible. Leftover sauce can be refrigerated in its own covered container for up to one week.

Gluten-Free Blueberry Cheesecake Cookies
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C and line two baking trays.
- Rub lemon zest into 75 g sugar. Cream with softened butter and vanilla until pale, then mix in the yolks. Add the combined flour, baking powder, xanthan gum and salt to form a scoopable dough.
- Spread one-third of the dough in a bowl and swirl in one-third of the jam. Cover with flattened pieces of the next third of dough and repeat. Finish with the remaining dough and jam. Fold just 2–3 times so the purple streaks stay visible.
- Stir cream cheese and 25 g sugar until smooth, then add warm cream and vanilla. Add 1–2 tsp extra cream only if the filling is too firm to spoon.
- Scoop 2-tbsp dough portions into the rolling sugar, coat and shape into 14 balls. Space at least 2 inches / 5 cm apart. Press a central well with a 1-tbsp measuring spoon.
- Fill each well with about 2–3 tsp cheesecake filling. Bake one tray at a time for 10–12 minutes, until slightly puffed and the filling has set. Keep the waiting tray at room temperature.
- Cool completely on the trays before moving.
- For the sauce, heat blueberries, 25 g sugar and lemon juice over medium-low heat until juicy. Remove from the heat. Mix cornstarch and water, stir into the fruit, then cook over medium-high heat for 2–3 minutes, stirring until thickened.
- Cool the sauce completely. Spoon over the cookies just before serving.
Notes
Weigh the flour and check packaged ingredients. Flour blends absorb differently; prevent cross-contact. Contains eggs and milk. Time fields are estimates. Follow the detailed baking range and allow additional time for cooling or setting as directed. Egg sizes refer to US large eggs.
