Ingredients

  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ½ cup unsalted butter, softened
  • 1 cup sour cream
  • 4 large eggs
  • Zest of 2 lemons
  • 1/2 cup fresh lemon juice
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease your bundt or loaf pan with butter and dust with flour.
  3. Cream together the softened butter and granulated sugar until light and fluffy, about 3–4 minutes.
  4. Incorporate the eggs one at a time, mixing well after each addition. Fold in the lemon zest.
  5. In a separate bowl, whisk together the flour, baking powder, and baking soda. Slowly alternate adding this dry mixture and the sour cream to the butter-sugar mix, starting and ending with the flour, until just combined.
  6. Pour in the fresh lemon juice and gently fold it into the batter.
  7. Pour the batter into the prepared pan and bake for 45-50 minutes until a toothpick inserted into the center comes out clean.
