Ingredients

  • 1 pound ground beef
  • 2 cups elbow macaroni
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 cup bell pepper, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt & pepper to taste

Instructions

  1. In a large skillet, heat a splash of olive oil over medium heat. Add chopped onions and minced garlic, sautéing for about 3-4 minutes until translucent.
  2. Add ground beef to the skillet, breaking it up and seasoning with salt and pepper. Cook for about 5-7 minutes until browned.
  3. Stir in diced bell pepper and cook for another 3 minutes until slightly softened.
  4. Pour in diced tomatoes and tomato sauce, followed by Italian seasoning. Simmer for about 5 minutes.
  5. In a separate pot, cook elbow macaroni according to package instructions until al dente, then drain.
  6. Incorporate the cooked macaroni into the skillet, stirring well to coat. Cook for an additional 2-3 minutes to heat through.
  7. Remove from heat, let sit for a few minutes, and serve hot with cheese on top if desired.
