Ingredients

  • 1 can chickpeas (15 oz, drained and rinsed)
  • 2 crisp apples (such as Granny Smith or Honeycrisp, chopped)
  • 1 cup celery (diced)
  • 1/2 red onion (finely chopped)
  • 1/4 cup raisins or cranberries (optional)
  • 1/4 cup walnuts or pecans (chopped, optional)
  • 1/4 cup fresh parsley (chopped)
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the chickpeas, chopped apples, diced celery, finely chopped red onion, and optional raisins or nuts.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients and gently toss to coat everything evenly.
  4. Fold in the chopped parsley.
  5. Refrigerate the salad for at least 30 minutes to allow the flavors to meld.
