Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp ground cinnamon
  • 1/2 tsp salt
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup apples, diced
  • 1/2 cup milk
  • Optional: 1/2 cup chopped nuts or raisins

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease your muffin tin or line it with paper liners.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  4. In a separate bowl, whisk together the oil, eggs, and milk until smooth.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Gently fold in the diced apples.
  7. Scoop the batter into the muffin tin, filling each cup about three-quarters full.
  8. Bake for 20-25 minutes, or until a toothpick comes out clean. Let cool for 5 minutes before transferring to a wire rack.

Notes

These muffins can be made ahead of time and frozen for up to three months. Reheat in the microwave or oven for best results.
