2 cups all-purpose flour, sifted
1 ½ cups sugar
1 tsp baking soda
1 tsp cinnamon
½ tsp nutmeg (optional)
½ cup vegetable oil
½ cup buttermilk
2 large eggs
2 cups chopped apples (Granny Smith or Honeycrisp)
1 cup chopped walnuts or pecans (optional)
½ cup powdered sugar (for glaze)
1–2 tablespoons milk (for glaze)
Instructions
Grease your slow cooker insert well with cooking spray or butter.
In a large bowl, combine flour, sugar, baking soda, cinnamon, and nutmeg.
In another bowl, whisk together the oil, buttermilk, and eggs until combined.
Gradually fold the wet mixture into the dry mixture until just combined; avoid over-mixing.
Gently fold in the chopped apples and walnuts or pecans.
Transfer the batter to your prepared slow cooker. Cover and cook on low for about 180-240 minutes, or until a toothpick inserted in the center comes out clean.
Mix powdered sugar and milk until smooth and drizzle over the cooled cake before serving.
Notes
Store leftovers in an airtight container for up to a week. You can also freeze slices for up to three months.
