  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (chilled and cubed)
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 6–8 tablespoons cold water
  • 3 medium apples (peeled, cored, and diced)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (for thickening)

Instructions

  1. Make the dough: In a large bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add cold water until the dough comes together. Chill for at least 30 minutes.
  2. Prepare the filling: In another bowl, mix the diced apples, brown sugar, cinnamon, lemon juice, and cornstarch. Set aside to let the flavors meld.
  3. Roll out the dough: On a lightly floured surface, roll out the chilled dough to about 1/8-inch thickness.
  4. Cut out circles: Use a round cutter or a glass to cut out circles (about 4-5 inches in diameter).
  5. Assemble the pies: Place a spoonful of the apple mixture in the center of each circle. Fold over the dough to enclose the filling, pressing the edges to seal. Crimp with a fork for added decoration.
  6. Bake or air fry: Preheat your oven to 375°F (190°C) and bake for 25–30 minutes, or air fry at 350°F (175°C) for about 15–20 minutes, until golden brown.
  7. Cool and enjoy: Allow the hand pies to cool slightly before serving. They’re best enjoyed warm!

Notes

For a flakier crust, use cold ingredients. Mix sweet and tart apples for best flavor.
