  • 1 cup rolled oats (not instant)
  • 1 cup all-purpose flour (or whole wheat)
  • 1/2 cup brown sugar (or maple syrup)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 1 cup apples (peeled, cored, and chopped)
  • 1 large egg (or flax egg for vegan)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar. Beat in the egg until well combined.
  3. In a separate bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined. Gently fold in the chopped apples and nuts, if using.
  5. Using a spoon or cookie scoop, drop tablespoon-sized balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each.
  6. Bake for 12-15 minutes or until the edges are lightly golden.
  7. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a vegan option, substitute the egg with a flax egg. Store baked cookies in an airtight container at room temperature for up to a week.
