  • 1 can black beans (drained and rinsed)
  • 1 cup corn (fresh or frozen)
  • 1 bell pepper (diced)
  • 1 medium onion (chopped)

  • ยฝ teaspoon smoked paprika
  • Salt and pepper (to taste)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 2 large eggs

Instructions

  1. Preheat your oven or air fryer to 375ยฐF (190ยฐC).
  2. Prepare the crust by placing it in a pie dish and lightly poking the bottom with a fork. Set aside.
  3. In a large bowl, combine black beans, corn, bell pepper, onion, cumin, smoked paprika, salt, pepper, and cheese.
  4. In a small bowl, whisk the eggs and stir them into the filling mixture until everything is well combined.
  5. Pour the filling into the prepared pie crust, spreading it evenly.
  6. Bake in the oven for 30-35 minutes or air fry for 25-30 minutes, until the filling is set and the crust is golden brown.
