Ingredients

  • 12 oz Pasta (penne or rigatoni)
  • 1 lb Italian Sausage (mild or spicy)
  • 2 cups Butternut Squash (diced)
  • 3 cloves Garlic (minced)
  • 1 medium Onion (diced)
  • 2 tablespoons Olive Oil
  • 1 cup Chicken or Vegetable Broth
  • ½ cup Cream
  • ½ cup Parmesan Cheese (grated)

Instructions

  1. Prep the Ingredients: Peel and dice the butternut squash into ½-inch cubes. Mince the garlic and dice the onion.
  2. Cook the Pasta: Boil water in a pot with a pinch of salt and cook the pasta until al dente (8-10 minutes).
  3. Sauté the Sausage: In a skillet, heat olive oil and crumble the Italian sausage, cooking until browned (5-6 minutes).
  4. Add the Vegetables: Sauté the onion and garlic with the sausage until the onion is translucent (3-4 minutes).
  5. Combine Squash and Broth: Add diced butternut squash and broth to the skillet, simmering covered until the squash softens (5-7 minutes).
  6. Finish the Sauce: Stir in cream and mix until well combined, adding pasta cooking water if needed.
  7. Toss the Pasta: Drain the pasta and combine with the sauce, seasoning as desired. Serve warm with extra Parmesan on top.

Notes

Store leftovers in an airtight container for up to three days, separating pasta and sauce if possible.
