  • 2 cups low-sodium chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup celery, chopped (optional)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat the olive oil over medium heat. Add chopped onion, garlic, and celery; sauté until softened (about 3-5 minutes).
  3. In a large bowl, combine the stuffing mix and sautéed vegetables. Pour in 1 ½ cups of chicken broth and mix well. Set aside.
  4. Season the chicken breasts with salt and pepper, then place them in a greased 9×13-inch baking dish.
  5. Spoon the stuffing mixture over the chicken breasts, spreading it evenly.
  6. Drizzle the remaining ½ cup of chicken broth over the stuffing to keep it moist during baking.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until the chicken is cooked through (internal temperature of 165°F (74°C)).
