  • 1 cup spinach
  • 1 bell pepper, diced
  • 1/2 cup shredded cheese (cheddar or feta)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together cottage cheese and eggs until well combined.
  3. Fold in diced bell pepper and spinach.
  4. Stir in shredded cheese, salt, and pepper.
  5. Pour the mixture into a greased baking dish.
