Ingredients

Scale
  • 4 large eggs
  • 1 block (about 8 oz) of feta cheese
  • 2 cups cherry tomatoes
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Add the cherry tomatoes to a baking dish, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for about 15 minutes.
  3. Remove from the oven, place the block of feta in the center of the tomatoes, drizzle with remaining olive oil, and sprinkle pepper on the feta.
  4. Crack the eggs over the feta and tomatoes.
  5. Return to the oven and bake for an additional 10-15 minutes until eggs are set to desired doneness.
  6. Add the spinach around the edges during the last 5 minutes of baking.
  7. Serve warm with crusty bread.
