Ingredients

  • 1 cup peanut butter (smooth or crunchy)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter and sugar until smooth.
  3. Add the egg and vanilla extract, and mix until thick.
  4. Sprinkle in the baking soda and fold it gently into the mixture.
  5. Scoop tablespoons of dough onto a lined baking sheet, spaced apart.
  6. Flatten each dough ball and create a crosshatch pattern with a fork.
  7. Bake for 10-12 minutes until edges are golden brown and centers are soft.

Notes

Store cookies in an airtight container for up to a week. For chewy cookies, avoid overbaking.
