Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips or chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas. Stir in the softened butter, brown sugar, egg, and vanilla extract until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. Gradually add the dry mixture to the wet ingredients, stirring until just combined. Fold in chocolate chips or nuts if desired.
  5. Using a cookie scoop or tablespoon, drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes or until the edges are lightly golden.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For best flavor, use overripe bananas. Store cookies in an airtight container for up to one week.
