Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the ripe bananas in a large bowl until smooth, leaving some chunks for texture if desired.
  3. Cream together the softened butter, brown sugar, and granulated sugar in a separate bowl until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, followed by the mashed bananas.
  5. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  6. Gradually blend the dry ingredients into the wet ingredients until well incorporated. Fold in the chocolate chips or nuts if using.
  7. Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. Bake for 10-12 minutes or until golden and slightly firm to the touch. Let cool on the sheet for a few minutes before transferring to a wire rack.
