Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Mash the bananas in a mixing bowl until smooth, then stir in the melted butter.
  3. Add the egg and vanilla, then mix well.
  4. Stir in the baking soda, salt, and sugar until thoroughly combined.
  5. Gently fold in the flour and cinnamon until just incorporated.
  6. For the crumb topping, mix the crumble ingredients in a separate bowl using your fingers to combine.
  7. Scoop the batter into the muffin tin, filling each about two-thirds full, and sprinkle the crumb topping over each muffin.
  8. Bake for 18-22 minutes, until a toothpick inserted in the center comes out clean.
