  • 3 ripe bananas
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup caramel sauce

Instructions

  1. Grease the slow cooker insert with non-stick spray or butter.
  2. Mash the ripe bananas and mix with sugar, softened butter, eggs, and vanilla extract until combined.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the banana mixture.
  4. Gently fold in the chopped pecans until evenly distributed.
  5. Pour the batter into the prepared slow cooker. Cover and cook on low for 3-4 hours or until a toothpick comes out clean.
  6. Let cool in the cooker for 30 minutes before transferring to a wire rack. Once cooled, slice the cake into layers.
  7. Layer each slice with caramel sauce and drizzle caramel on top, then garnish with more pecans.

Notes

For a twist, add chocolate chips or use brown sugar instead of granulated sugar. Keep refrigerated and consume within 5 days.
