1 cup mashed ripe bananas (about 2 medium bananas)
1/2 cup granulated sugar
1/2 cup brown sugar
1/2 cup unsalted butter, softened
1/2 cup vanilla pudding mix
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Optional: 1/2 cup chopped walnuts or pecans, chocolate chips, or shredded coconut
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and softened butter. Mix until smooth.
Add the egg and vanilla extract to the banana mixture, mixing well to combine.
In a separate bowl, whisk together the flour, vanilla pudding mix, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If desired, fold in nuts or chocolate chips.
Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 12–15 minutes or until the edges are lightly golden. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Choose ripe bananas for maximum flavor. Chill the dough for thicker cookies, if desired.
