  • 2 lbs chicken thighs or drumsticks (bone-in, skin-on)
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tsp sriracha

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken dry with paper towels.
  3. In a shallow bowl, combine flour, garlic powder, paprika, salt, and pepper.
  4. In another bowl, place the beaten egg, and in a third bowl, add the panko breadcrumbs.
  5. Dip each chicken piece in the flour mixture, then the egg, and finally coat with panko breadcrumbs.
  6. Arrange the coated chicken on a baking sheet lined with parchment paper and bake for 30-35 minutes, until golden brown and crispy.
  7. While chicken bakes, mix mayonnaise, sweet chili sauce, and sriracha in a small bowl.
  8. Drizzle the Bang Bang sauce over the crispy chicken or serve it on the side.

Notes

For extra crispiness, use a wire rack on your baking sheet.
