Ingredients

Scale
  • 2 tablespoons unflavored gelatin
  • 1 cup cold water or low-calorie juice
  • 1 cup boiling water
  • Low-calorie sweetener (Stevia, Erythritol, etc.)
  • Flavor extracts (Vanilla, Almond, etc.)
  • Fruit (optional, such as berries or diced peaches)

Instructions

  1. Gather all ingredients.
  2. Dissolve gelatin in cold liquid and let it bloom for 5 minutes.
  3. Heat boiling water in a saucepan and stir in the bloomed gelatin mixture until fully dissolved.
  4. Remove from heat, add sweetener, and any flavor extracts or fruit.
  5. Pour into a mold or dish, let cool, then refrigerate for 2-3 hours to set.
  6. Slice and serve once set.

Notes

Can be made ahead of time and stored in an airtight container for up to 5 days.
