  • 2 pounds pork shoulder (or chicken thighs)
  • 1 cup BBQ sauce
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Buns (optional)
  • Coleslaw (optional)

Instructions

  1. Trim any excess fat from the pork shoulder and cut it into large chunks for even cooking.
  2. In a bowl, mix together smoked paprika, salt, and pepper. Rub the seasoning all over the meat.
  3. Place the sliced onion at the bottom of the slow cooker. Add the seasoned pork on top, followed by the minced garlic.
  4. Pour the BBQ sauce over the meat, ensuring it’s well-coated.
  5. Cover and cook on low for 6-8 hours or high for 4-5 hours, until the meat is fork-tender.
  6. Once cooked, shred the meat with two forks and mix it with the sauce in the pot for added flavor.
  7. Optional: Serve on buns with coleslaw for a crowd-pleasing sandwich!
