  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 cup pearl barley
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Gather and prep your ingredients, chop the vegetables and garlic, and cut the beef into bite-sized pieces.
  2. Brown the Beef: In a large pot over medium heat, heat the olive oil. Add the beef stew meat in a single layer, season it with salt and pepper, and brown for about 4-5 minutes on each side.
  3. Sauté the Vegetables: Remove the beef and set aside. In the same pot, add the diced onion, carrots, and celery, sautéing until softened, about 5-7 minutes.
  4. Garlic Time: Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Combine and Simmer: Return the beef to the pot, add pearl barley, broth, thyme, and bay leaf. Bring to a boil, reduce heat, cover, and let simmer for about 1 hour.
  6. Adjust and Serve: Taste the soup, adjust seasoning if needed, and remove the bay leaf before serving hot, garnished with parsley if desired.

Notes

This soup can be made in a slow cooker by browning the meat and vegetables first and then cooking on low for 6-8 hours.
