Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Powdered sugar for rolling

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
  2. In a separate large bowl, mix granulated sugar, vegetable oil, and vanilla extract. Add eggs one at a time, whisking until smooth and glossy.
  3. Gradually add the dry mixture into the wet mixture, stirring gently until just combined.
  4. Cover bowl with plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. Scoop out about a tablespoon of dough, roll into a ball, and coat in powdered sugar.
  7. Place dough balls on the baking sheet and bake for about 10-12 minutes. Let cool for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to a week. For longer storage, freeze in a zip-top bag for up to three months.
