Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter (softened)
  • 1 ½ cups granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 2–3 minutes.
  4. Add in the egg, vanilla extract, and almond extract, mixing well until all the wet ingredients are fully incorporated.
  5. Gradually add the dry ingredient mixture to the butter mixture, mixing on low speed until just combined.
  6. Divide the dough in half, wrap each portion in plastic wrap, and refrigerate for at least 1 hour.
  7. On a lightly floured surface, roll out one portion to about ¼ inch thick. Use cookie cutters to cut out shapes and place them on the prepared baking sheet.
  8. Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store baked cookies in an airtight container for up to a week at room temperature, or freeze for longer storage.
