Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 pinch of salt
  • ½ cup vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh blackberries

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan and line the bottom with parchment paper.
  3. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, whisk the vegetable oil, buttermilk, eggs, and vanilla extract until smooth.
  5. Slowly pour the wet ingredients into the dry and mix until just combined.
  6. Gently fold in the fresh blackberries.
  7. Pour the batter into the prepared pan and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
