Ingredients

  • 2 cups cottage cheese
  • 2 large eggs
  • 1 cup fresh blueberries
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease an 8×8-inch baking dish.
  3. In a medium bowl, mix the cottage cheese, eggs, oats, half of the blueberries, honey (or maple syrup), vanilla, cinnamon, and salt until well blended.
  4. Pour the mixture into the prepared baking dish and sprinkle the remaining blueberries on top, pressing them slightly into the batter.
  5. Bake for 25-30 minutes, or until golden brown and a knife inserted into the center comes out clean.
  6. Allow to cool for 5-10 minutes before slicing and serving warm.

Notes

This dish can be prepared ahead of time and baked in the morning. Also, it can be customized by using different fruits or cheese types.
