Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 1–2 tbsp Dash Garlic and Herb Garlic Blend (or any salt-free seasoning)
  • 1 tbsp olive oil
  • 5 tbsp butter, divided
  • 1 yellow onion, diced
  • 2 carrots, diced
  • 2 celery ribs, diced
  • 6–7 garlic cloves, minced
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • 2 cups chicken broth
  • 2 cups biscuit dough (homemade or store-bought)

Instructions

  1. Heat the oil and butter. In a large pot, warm 1 tbsp olive oil and 2 tbsp butter over medium heat until the butter melts and the pot is hot.
  2. Sauté the vegetables and garlic. Add the diced onion, carrots, celery, and minced garlic. Cook, stirring occasionally, until the vegetables are tender, about 5 to 7 minutes.
  3. Add the chicken and seasoning. Add the chicken pieces and sprinkle the 1 to 2 tbsp garlic blend over them. Cook, stirring and turning the pieces, until the chicken is browned on all sides, about 6 to 8 minutes.
  4. Pour in the chicken broth and bring to a boil. Pour the 2 cups chicken broth into the pot, scraping any browned bits from the bottom. Increase heat to bring the mixture to a boil.
  5. Reduce heat and simmer with broccoli. Lower the heat to a gentle simmer, then add the 1 cup broccoli florets. Allow the pot to simmer for about 10 minutes so the chicken finishes cooking and the broccoli becomes tender.
  6. Add the biscuit dough. Drop spoonfuls of the 2 cups biscuit dough over the mixture so they sit on top of the simmering broth. Cover the pot and let cook for an additional 15 minutes, or until the biscuits are cooked through.
  7. Stir in the cheddar cheese. Remove the lid, stir in the 1 cup shredded cheddar cheese until melted and creamy, and taste for seasoning.
  8. Serve hot. Ladle into bowls and enjoy right away while the dumplings are fluffy and the cheese is melted.

Notes

Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently on the stovetop. Can be frozen without biscuit dough for best results.
