Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chopped pecans
  • ½ cup unsalted butter, softened (for frosting)
  • 1 cup packed light brown sugar (for frosting)
  • 2 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 2 cups powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Add in the eggs and vanilla, mixing until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the wet mixture, mixing until just combined.
  5. Fold in the chopped pecans until evenly distributed.
  6. Scoop tablespoon-sized balls of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are just golden. Allow to cool before frosting.
  8. For the frosting, cream together softened butter and brown sugar until smooth, then add milk and vanilla, mixing until creamy.
  9. Gradually add powdered sugar, mixing until the frosting reaches desired consistency.
  10. Spread frosting over the cooled cookies and enjoy!

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store cookies in an airtight container at room temperature for up to a week.
