Ingredients

Scale
  • 1 cup unsalted butter (melted)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup pecans (chopped, plus extras for topping)
  • 1 cup corn syrup
  • 1/2 cup brown sugar
  • Pinch of salt

Instructions

  1. Grease the slow cooker with non-stick spray or butter.
  2. In a large mixing bowl, combine melted butter and granulated sugar. Mix in the eggs, one at a time, then stir in cocoa powder, flour, vanilla extract, and a pinch of salt until well combined.
  3. Pour the brownie batter into the slow cooker, spreading evenly across the bottom.
  4. In another bowl, mix corn syrup, brown sugar, and chopped pecans until combined. Pour this mixture over the brownie base in the slow cooker.
  5. Cover and cook on low for 3 to 4 hours, or until the center is set and a toothpick inserted comes out with a few moist crumbs.
  6. Let it cool for at least 30 minutes before serving.
  7. Top with extra pecans and enjoy warm or at room temperature.

Notes

For variations, consider using dark chocolate cocoa for a richer flavor or adding a dash of cinnamon for warmth.
