  • 2 cups penne pasta
  • 1 lb boneless, skinless chicken breasts or thighs
  • 1/2 cup buffalo sauce
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. In a large pan over medium heat, add olive oil. Season the chicken with salt and pepper, then cook for about 6-8 minutes on each side until cooked through.
  3. In a bowl, mix buffalo sauce and heavy cream to create the sauce.
  4. Remove cooked chicken, slice into bite-sized pieces, and set aside.
  5. In the same pan, bring the buffalo sauce mixture to a simmer, then add the sliced chicken and cook for another 2-3 minutes.
  6. Toss the cooked pasta into the sauce, adding reserved pasta water if needed to adjust consistency.
  7. Stir in grated Parmesan cheese until melted and everything is well combined.

Notes

Customize the heat level of the buffalo sauce to your liking; serve with a side salad or garlic bread.
