  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup pecans, chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine butter, brown sugar, and granulated sugar, beating until light and fluffy.
  3. Add the egg and vanilla extract, mixing until fully incorporated.
  4. In another bowl, whisk together flour, baking soda, and salt; gradually add to the wet ingredients until just combined.
  5. Fold in the toasted pecans.
  6. Scoop rounded portions of dough onto a baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes until edges are golden and centers look slightly underbaked.
  8. Allow cooling on the baking sheet before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for at least 30 minutes before baking. Store cookies in an airtight container for up to a week.
