  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, brown sugar, and granulated sugar until creamy. Add in the eggs and vanilla, mixing until smooth.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until combined. Do not overmix!
  5. Fold in the toasted pecans gently until evenly distributed.
  6. Scoop heaping spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until lightly golden. Let cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container for up to a week.
