Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the vanilla extract until well combined.
  4. Gradually add the flour, chopped pecans, and salt, mixing until just combined.
  5. Using your hands, roll the dough into 1-inch balls and place them on a baking sheet lined with parchment paper about 2 inches apart.
  6. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  7. Let the cookies cool on the baking sheet for a few minutes, then roll in powdered sugar while still warm.

Notes

For extra flavor, try adding a pinch of cinnamon to the powdered sugar before dusting. Store in an airtight container for up to a week.
