Ingredients

Scale
  • 8 oz elbow macaroni
  • 1 lb boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 cups shredded cheddar cheese
  • 1/2 cup cream cheese
  • 1 cup milk
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Bring a large pot of salted water to boil. Cook the elbow macaroni according to package instructions until al dente, about 6-8 minutes. Drain and set aside.
  2. Slice the chicken breasts into bite-sized pieces and season generously with Cajun seasoning.
  3. In a skillet, melt the butter over medium heat. Add the seasoned chicken pieces and cook for about 5-7 minutes until cooked through and golden brown; remove from heat.
  4. In a large mixing bowl, combine the cooked pasta, sautéed chicken, cheddar cheese, cream cheese, and milk. Mix well until combined and the cheese begins to melt.
  5. In the skillet, combine the pasta mixture with the remaining Cajun seasoning. Stir for 2-3 minutes over low heat to meld the flavors.
  6. Taste and adjust seasoning with salt and pepper as needed, and serve hot, garnished with parsley or extra cheese if desired.

Notes

You can customize this dish with variations like shrimp or sausage for added flavor. Perfect for potlucks!
