Ingredients

  • 1 cup ricotta cheese
  • ½ cup cream cheese, softened
  • ¾ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon or orange zest
  • 1 cup mini chocolate chips
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine ricotta cheese and cream cheese, then beat until smooth and creamy.
  3. Gradually add powdered sugar, vanilla extract, and zest. Mix until fully combined.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add this to the ricotta mixture, stirring gently.
  5. Fold in mini chocolate chips.
  6. Line a baking sheet with parchment paper and drop rounded tablespoons of dough onto it, spacing about 2 inches apart.
  7. Bake for 15-20 minutes or until lightly golden.
  8. Cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

For a richer flavor, mascarpone can be substituted for ricotta.
