Instructions

  1. In a large mixing bowl, combine the all-purpose flour, baking powder, and granulated sugar.
  2. In another bowl, mix the ricotta cheese, vanilla extract, and half of the chocolate chips until smooth.
  3. Gradually fold the dry ingredients into the wet ingredients to form a dough.
  4. Cover the dough with plastic wrap and place it in the refrigerator for 30 minutes.
  5. Preheat your oven to 350°F (175°C).
  6. Using a spoon, take tablespoon-sized portions of dough and roll them into balls.
  7. Place them on a lined baking sheet about 2 inches apart and sprinkle on the remaining chocolate chips.
  8. Bake for 12-15 minutes, or until the edges are slightly golden brown.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  10. Dust with powdered sugar before serving.
