Ingredients

  • 1 cup graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons brown sugar
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 medium apples, peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar. Press into the bottom of a greased 9×9-inch baking pan and bake for 10 minutes.
  3. In a large mixing bowl, beat the cream cheese until smooth. Gradually add sugar and beat until fully incorporated.
  4. Add eggs one at a time, mixing until just combined. Stir in the vanilla extract until smooth.
  5. Toss the diced apples with lemon juice and cinnamon. Layer half of the cheesecake filling into the baked crust, followed by the apple mixture. Pour the remaining cheesecake filling on top.
  6. Bake for 40-45 minutes, or until edges are set and the center has a slight jiggle.
  7. Once baked, let cool and drizzle with caramel sauce. Chill in the refrigerator for at least 3 hours before slicing.

Notes

Best served chilled. Can be reheated gently if desired.
