Ingredients

  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup chopped apples (peeled)
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add eggs and vanilla to the butter-sugar mixture; mix until combined.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the chopped apples until just combined.
  6. Scoop the batter into the prepared cupcake liners, filling them about 2/3 full, and bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow to cool, then elegantly drizzle each cupcake with caramel sauce and serve!

Notes

For extra sweetness, serve with vanilla ice cream. Store in an airtight container for up to 3 days at room temperature.
