Ingredients

  • 1 (9-inch) pie crust, refrigerated (store-bought or homemade)
  • 2 cups pecans, roughly chopped
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • ¾ cup corn syrup (light or dark)
  • 4 large eggs
  • ¼ cup unsalted butter, melted
  • 1 tsp vanilla extract
  • ½ tsp salt

Instructions

  1. Grease the inside of your slow cooker with cooking spray or butter.
  2. In a large bowl, combine brown sugar, granulated sugar, and corn syrup; whisk until smooth.
  3. Beat in the eggs one at a time.
  4. Add melted butter, vanilla extract, and salt, then fold in the chopped pecans.
  5. Place the pie crust into the greased slow cooker and pour the filling over it.
  6. Cover and cook on low for 3 to 4 hours until the filling is set but still a little jiggly.
  7. Let the pie cool for at least 30 minutes before slicing and serving.

Notes

Serve warm or at room temperature. Leftovers can be refrigerated for up to 3 days.
