Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • A pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, cardamom, ginger, and salt until fully combined.
  3. In a separate large bowl, combine the softened butter and sugar. Beat on medium speed for 2-3 minutes until light and fluffy.
  4. Add the egg and vanilla extract, mixing until well incorporated.
  5. Gradually add the dry ingredient mixture to the wet ingredients, mixing on low speed until just combined.
  6. Use a cookie scoop or a tablespoon to portion out the dough, rolling each piece into a ball and placing them on a lined baking sheet.
  7. Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden.

Notes
